Description
THE WHITE WINE
Deep sandy to clayey gravel white wine. Bordeaux Wine, Cantenac, and Soussans, in the Margaux appellation.
VINIFICATION
- Immediate pressing to avoid contact between the skin and the juice of the grapes.
- Parcel-based vinification.
- Spontaneous alcoholic fermentation. 17 days of alcoholic and malolactic fermentation.
- No additives. Not fined.
BLENDING
Endemic grape varieties of the Margaux appellation:
- 70% Cabernet Franc
- 30% Guespey (Muscadelle)
CULTURAL PRACTICES
No pesticide residues.
AGING
5 months aging on lees, in TAVA amphorae. Batonnage twice a day for 2 months.
