Natural Wine
Beyond organic and biodynamic farming, I wanted to convert the Vertheuil vineyard to agroecology and agroforestry.
Nearly 1000 trees will be planted on this 8-hectare plot. Each tree species is chosen based on its synergy with the vine. Cover crops are also implemented to promote biodiversity, regenerate soil life, sequester carbon in the soil, and thus combat climate change.
From this vineyard was born the Ceres cuvée, whose name means Roman goddess of agriculture and fertility. Ceres is a wine without added sulfur, certified organic and biodynamic since 2021. Its style is pure, supple, airy, in perfect harmony with nature.
I associated with this project a renowned artist and landscaper François Houtin to design the label: a vine climbing in a tree, in other words, the vine in its natural state.

The Vineyard
8 hectares in a single block located in the commune of Vertheuil, north of Pauillac. Clay-limestone soil.
The Vinification
Parcel-based vinification. Maceration with the addition of an inert gas to stimulate gentle movements. Pumping over one volume/day. 24 days of maceration. Vertical pressing. Nitrogen blanketing during transfers to protect the must from oxidation.

100% Merlot

No pesticide residues. Made from Demeter-certified grapes.
