Semolina is a foodstuff obtained by grinding durum wheat or other cereals to a greater or lesser degree of coarseness. It is used to prepare dishes such as couscous, tabbouleh, polenta and pasta. It is rich in vegetable proteins and provides B group vitamins, such as thiamine and folate.

Wholemeal couscous is made from wholemeal durum wheat semolina and water. The grains obtained are then pre-cooked and dried. The colour of wholemeal couscous varies from amber yellow to light brown.

INSTRUCTIONS FOR USE
Pour the couscous into a bowl and add the same amount of boiling water. Cover and leave to swell for 5 minutes. Loosen the grains with a fork. Season to taste. Wholemeal couscous is ideal for making the traditional couscous recipe by adding vegetables, meat and the spices of your choice. It will also be delicious as a side dish with all your vegetables and for making tabbouleh. Store in a cool, dry place away from light.
